
I'm a vegetarian (pescatarian, really, since I eat the occasional fish dish) and have been on more of a vegan kick lately (little gluten, more raw veggies, healthy juices, and coconut oil instead of olive oil). Recently, I was introduced to the goodness that is Ambitious Kitchen.
I baked her flourless, peanut butter, oatmeal, chocolate chip cookies just in time for the East Coast's recent blizzard. They were delicious. The only adjustment that I made to the recipe was that I added a bit more vanilla than it suggested and added cinnamon and a dash of nutmeg. They were delicious...and slightly (?) healthy.
